A 1-Ingredient Lentil Flatbread Recipe That's Both Vegan and Gluten-Free — Need We Say More?

Whether you're on the go or just prefer sandwiches with less bread, flatbreads are always great to have on hand. They're lighter on the stomach, can be packed with flavor, and now, they're even easy to make at home. This one-ingredient lentil flatbread recipe from TikTok user Daphne Karla (@daphnekarlajo) is ridiculously simple (hello, one ingredient). Plus, it's vegan and gluten-free, so everyone in your house can join in on the snack too.

The homemade recipe makes five large, thin lentil flatbreads; for a thicker flatbread that can hold all the fixins, simply cut the amount of water in half. If you usually prepare your lunch in the morning, allow the lentils to soak overnight or put the lentils in water when you wake up so they're ready by lunch or dinnertime. With only one ingredient, there's no harm, fuss, or sweat. Here's the recipe:

  1. Soak a cup of dry lentils in three cups of water for at least four hours.
  2. Rinse lentils thoroughly. Combine lentils, a half cup of water, and a sprinkle of salt (optional) into a blender, blend on high speed. For a thinner batter, use a whole cup of water.
  3. On a non-stick frying pan, pour batter to desired size and grill each side for about two-to-three minutes on low-medium heat.
  4. Once golden on both sides, remove from pan and enjoy plain or with your choice of spread, like avocado.

Since these are made fresh, it's probably best to eat within a few days but given how tasty these look, we don't foresee that being a problem!
