There's no easier breakfast than a jar of overnight oats. Two minutes of prep the night before, and you have a filling whole-grain breakfast ready to go the following morning. While it's hard for me to tire of my go-to overnight oats combination, it's fun to mix things up every once in a while — and that's where this seasonal twist comes in handy.

You might not be able to enjoy a slice of pumpkin pie every night, but this breakfast will help curb those sugary cravings. Adding a tablespoon of pumpkin puree and a teaspoon of pumpkin pie spice totally transforms the flavor of your oats to taste like Thanksgiving dessert and helps bring even more immunity-boosting vitamin A to your breakfast. INGREDIENTS

    • 1/2 cup almond milk
    • 1/2 cup rolled oats
    • 1 tablespoon pumpkin puree
    • 1 teaspoon vanilla extract
    • 1 teaspoon pumpkin pie spice
    • Pepita seeds, to garnish

    INSTRUCTIONS

    1. Mix all the ingredients together, except the pepita seeds, in a glass jar. Stir well, cover, and refrigerate overnight.

    2. The next morning, remove it from the fridge, top it off with your seeds, and enjoy!
