INGREDIENTS

    • For the dressing:
    • 1 tablespoon lemon juice
    • 1 tablespoon red wine vinegar
    • Pinch of oregano
    • For the salad:
    • 2 tablespoons thinly sliced carrot
    • 2 tablespoons chopped red pepper
    • 1/4 cup spinach
    • 1/4 cup quinoa, cooked
    • 1 avocado, halved and pitted

    INSTRUCTIONS

    1. Combine the lemon juice, red wine vinegar, and oregano in a small bowl and whisk until combined. Add the carrot, red pepper, spinach, and quinoa to the small bowl and mix until all the ingredients are tossed in the dressing.

    2. Set up your halved avocado on a plate, and scoop out extra flesh if necessary. Divide the quinoa salad, and spoon it into the center of each avocado half. Eat up!
