30 Minutes is All You Need for These 3 Fall Dishes

There's nothing better then enjoying the bounty of the season, and in this video, Laura Vitale of Laura in the Kitchen and Simply Laura, and triple threat (actress, recording artist, and busy mom) Ana Gasteyer, celebrate all the flavors Fall has to offer. Not only are these dishes easy to make (30-minutes or less!), they're healthy, fresh, and flavorful, too.   1. Accept you won't stop after one bite . . . at least when it comes to desert. As anyone with a sweet-tooth knows, I am not going to stop eating that tri-layer chocolate cake after just having one bite. Making mini-sized desserts of things I love is a great way for me to get my chocolate on without over-indulging.
  2. Don't be afraid to get creative Recipes don't have to be one-size-fits-all. I like to get creative – even with a cocktail. Mint Julep's are my favorite and I recently added maple syrup to make it more fall-themed. Even just adding a little bit went a long way — it was delicious!
  3. The gym isn't the only place to be active. Everyone is busy and it's hard to get an hour in at the gym. My kids and I do a lot of walking whenever we can. Even just walking to school gives me a decent amount of activity points so don't underestimate activities that can take place outside of the gym.
  4. G is for grains. Pasta can be a go-to whole grain for a lot of people, but Weight Watchers has taught me to expand my palate for a lot of things including grains. Farro is something I love to use. It has a nutty taste that's great in hearty soups or even salads with fresh herbs.
  5. Spice up your veggies. Literally. Let's face it, being that person with a plate of carrot sticks and celery isn't fun or filling. I make a mean baked buffalo cauliflower that is a great compliment to a few wings during football parties. It's nice to have some lighter, delicious options for guests.
