I could go on for hours about how much better prosciutto is than bacon, but that's not what I'm here to do. I'm here to tell you how to make crispy prosciutto chips, aka the Italian bacon that will become your favorite breakfast staple, snack, and garnish. While you're eating a slice of prosciutto straight from the package, pop a couple on a microwave-safe plate lined with a paper towel, and cover the top with another paper towel. Heat up the slices for 30 seconds at a time until they're as crispy as you want them, one to one and a half minutes total. Your kitchen will fill with the intoxicating aroma of bubbling, salty cured ham . . . and if you're not into that, we probably can't be friends.
