I actually soak mine in salt water so they are salted inside and out (like sunflower seeds)

My favourite 'seasoning' for pumpkin seeds is simply not washing them! I just remove any orange/stringy bits, add olive oil and kosher salt, and roast as above. It makes the seeds less 'dry' tasting, and makes them more pumpkin-y (I know, go figure!). So addictive.

fuzzles - Where can one find something so heavenly-sounding as shallot salt? I've been meaning to try them in a sweet preparation with brown sugar and pumpkin pie spice. I bet that'd be delicious!

LOVE these little guys! Two of my favorite seasonings are shallot salt or smoked Spanish paprika with a little coarse sea salt. Good snackin'!
