This Ridiculously Huge Pan of Risotto-Style Spaghetti Will Put You in a Carb Coma

The video above shows chef Lorenzo Boni, executive chef of Barilla America, cooking up a huge amount of risotto-style spaghetti, and the whole process is mesmerizing. To cook spaghetti like risotto, you don't drain the pasta of the liquid. You simply use enough water or stock — plus maybe a little white wine — that will absorb into the pasta and aid in a creamy sauce that clings to the spaghetti. In this recipe, it looks like Lorenzo started with tons of sliced cloves of garlic before adding water and dried spaghetti to the pan. Once the pasta became al dente and some liquid still remained, he added fresh torn basil leaves, pesto, handfuls of parmesan cheese, pink peppercorns, and a generous drizzle of olive oil before tossing it all together. To put it simply, it's the ultimate one-pot pasta recipe.

As for the giant pan that we're all wondering about, the chef says it's produced in Italy. In the Instagram comments, Lorenzo noted that the huge pan can cook around 20 pounds of pasta, referring to this as a "small batch."
