While you might normally throw away the potato peels when making fries, his trick is to actually use them. The result? A french fry/potato chip hybrid. All you have to do is wash and dry your potato peels before frying them in oil at 350 degrees for about two to four minutes depending on the size of your peels. They come out super crispy, and you can top them with whatever you want, from plain salt to rosemary seasoning and cheese.
