Cotton Candy Cookies

INGREDIENTS

    • 3 1/2 cups flour
    • 1 teaspoon baking powder
    • 1-1/2 cups butter, softened
    • 1 cup sugar
    • 2 3-ounce packages JELL-O strawberry-flavored gelatin
    • 1 egg
    • 1 teaspoon vanilla

    INSTRUCTIONS

    1. Preheat your oven to 400ºF.

    2. Mix together flour and baking powder in a mixing bowl. In a separate bowl, beat butter until creamy then add the sugar and one box of the JELL-O strawberry-flavored gelatin mix, whipping until fluffy. Add the egg, vanilla, and then gradually blend in the flour mixture.

    3. On a parchment-paper-covered baking tray, shape dough into a 1-inch round then flatten with the bottom of a glass. Sprinkle flattened cookies with the other box of JELL-O strawberry-flavored gelatin mix, evenly distributing between cookies to create the top crust.

    4. Bake 8-10 minutes or until edges are lightly browned. Cool on baking sheets 3 minutes. Remove to wire racks and cool completely.
