Make Mini Taco Cups For Fun School Lunches

INGREDIENTS

    • 4 to 5 8-inch tortillas
    • 1 15-ounce can refried beans
    • 1/2 cup shredded cheddar cheese
    • Black olives (optional)
    • Salsa (optional)

    INSTRUCTIONS

    1. Preheat your oven to 375ºF.

    2. Use a drinking glass to cut 12 rounds out of the tortillas and place into a lightly greased muffin tin. Press the rounds slightly so they sink into the muffin tin.

    3. Top the tortillas with refried beans and cheese along with any other toppings your child loves, like chopped green pepper, olives, salsa, shredded chicken, or cooked ground beef.

    4. Place in the oven and bake for 12-15 minutes or until the tops are bubbling and the edges of the tortillas have just started to brown.

    5. Cool before serving.
