The Right Way to Grill Hot Dogs and Sausages

Grilling hot dogs and sausages might seem like a culinary task so simple that instructions aren't necessary. In many ways it is (easy, that is), but to do it right requires a pinch of know-how. The key thing to know is that both of these Summer cookout staples are temperature-sensitive and prone to splitting and drying out. Instead of throwing them straight on a smoking-hot grill, follow one of these two methods:

  1. Simmer then grill: Parcook the sausages prior to grilling by simmering them in water (or beer!) until heated through, about five minutes. Once hot, grill each side for a couple minutes over medium-high heat, until golden brown.
  2. Grill very carefully: Build a two-level fire in your grill (meaning medium-high heat on one side, no flame on the other). Cook the sausages on the cool side, flipping occasionally, until warm. Once warmed through, grill each side for a couple minutes over medium-high heat, until golden brown.
