You Can Make Smoky Vegan Bacon Out of Carrot Slices, and the Crunch Sounds Divine

Much like Ron Swanson, I believe breakfast is the best meal of the day, and that meal isn't complete without a little bit of bacon on the side. In a video shared to her account, TikTok star Tabitha Brown put a Chris Traeger twist on a Ron Swanson favorite when she shared her recipe for vegan bacon made entirely with carrots and spices.

Tabitha begins by cutting the carrots with a vegetable peeler to create thin "bacon" slices. She then combines liquid smoke, maple syrup, garlic powder, onion powder, smoked paprika, and a sprinkle of pepper in a bowl and lets the carrot slices marinate in the mixture for about two minutes. Afterwards, Tabitha air fries the carrot slices at 380 degrees Fahrenheit for five minutes — but you can also use the oven — and I can't get over how crunchy the bacon sounds when it's done.

Tabitha then goes on to make a BLT wrap out of her carrot bacon. I also have a feeling this would be great with a side of pancakes, crumbled on a bowl of mac 'n' cheese, or sprinkled over a baked potato. While carrots may not be immediately where my mind goes when it comes to savory, smoky breakfast foods, Tabitha's recipe has me convinced I have to try to spice up my next brunch with a little bit of this crispy treat.
