The 1 Instant Pot Dessert Recipe My Kid Loves Just as Much as I Do

If there's anything I love in this world, it's dessert. With the endless amounts of options from places all over the world, it's hard to run out of new recipes to try. But in my opinion, nothing beats the classics, especially ones that can instantly take you back to your childhood. Growing up, my mom made arroz con leche (rice pudding) every week during the Winter (and any day we needed cheering up), and I remember the house filling up with the sweetest and most comforting smells of cinnamon and warm milk.

When I got older, I was hesitant to make it because nothing would compare to how my mom makes it, but after having my daughter, I knew I needed to carry on the tradition for her. So after I bought an Instant Pot, I tried my mom's recipe, and it was a hit! Both my parents and my daughter love it (even though my mom refuses to switch over from the classic stove method).

Gather Your Ingredients

Chances are you probably have the majority of the ingredients for this already at home. There's a slight variation in ingredients depending on which Latin American country you ask, but these are the ones I like to use:

  • 1 cup white rice (long-grain or medium-grain is totally up to you)
  • 1 12-ounce can evaporated milk
  • 1 14-ounce can condensed milk
  • 1 cup whole milk (or whichever milk you prefer)
  • 1 1/2 cups water
  • Ground cinnamon for dusting

First, grab your mesh strainer and rinse a cup of rice under cool water until the water is completely clear.

Then, measure out your milk, water, and evaporated milk, and pour them into your Instant Pot liner.

Add the rinsed rice right after, and stir so everything is spread out evenly. This is really important because you don't want your rice to be clumped up in one spot.

Set Your Instant Pot

Set Your Instant Pot

Now, you can close the Instant Pot, making sure to set the pressure release valve to "Sealing." Select the "Porridge" setting, and set the timer for 20 minutes. Once the cook time has finished, let the Instant Pot do a natural pressure release for about 20 minutes. Alternatively, you can do it for 10 minutes and then gradually set the pressure valve to "Venting," keeping an eye on your Instant Pot to make sure it doesn't splatter.

Stir In the Condensed Milk

Stir In the Condensed Milk

After all the pressure has been released, open your Instant Pot and add in the sweetened condensed milk. Make sure you use a big spoon to stir in the condensed milk entirely into the rice pudding.

Grab your favorite cup or ramekin, pour in your desired amount, and sprinkle a little bit (or a lot) of cinnamon on top and enjoy your arroz con leche!
