These muffins though . . . They are so bomb and super easy to make! When I was little my mom would always get angel food cake and top it with strawberries. It was delish, but now if I'm going to have a treat I want to get more bang for my bites. These strawberry shortcake protein muffins are packed with nutrients and a perfect quick breakfast or healthy dessert!
Preheat oven to 375 degrees Fahrenheit.
Mix first nine ingredients until smooth using a hand mixer or blender.
Gently fold in the strawberries and coconut flakes.
Add to muffin cups and bake for 15-20 minutes or until you can test with a fork or toothpick and it comes out clean.
