Cookbook extraordinaire Dorie Greenspan just saved Christmas with the ultimate cookie-rolling hack. Rather than rolling your cookie dough out with a pin after letting it chill in the fridge, as most recipes suggest, she recommends rolling your dough before chilling, doing so between two sheets of parchment paper instead of on a flour-covered surface. This totally eliminates the all-too-familiar issue of having your dough stick to either the rolling pin or kitchen countertop. Plus, it gives your arms a break from having to roll out cold, hard dough. Pure genius! Once you've flattened the dough out to your preferred thickness, pop it — parchment paper included! — in the fridge for about an hour. After the dough has sufficiently chilled, let the cutting begin!
