Laksa is a Southeast Asian soup made with coconut milk and spicy curry paste. It's usually served with rice noodles, shrimp, or chicken, but it can also easily be made so it's vegan-friendly. You'll need to make some laksa paste, but once you do, you can freeze it and keep it on hand for the next time you want to make this or another laksa recipe. Use a blend of rice laksa noodles, zucchini noodles, and carrot noodles to get a mix of nutrients, flavors, and textures, plus plenty of veggies.
