Make This Spin on Buffalo Chicken Wings For Game Day

If you love buffalo chicken wings, you have to make this spin that's all about comfort food. A piping-hot sweet potato acts as the base for shredded chicken, chunky blue cheese sauce, and vibrant chopped lettuce leaves. It's a winning combo that works as dinner or while watching the big game.

Stuffed Buffalo Chicken Sweet Potatoes

INGREDIENTS

    • 4 sweet potatoes
    • 1 pound chicken breast
    • 1 tablespoon butter
    • 1 teaspoon hot sauce
    • 1 tablespoon tomato paste
    • 1/4 teaspoon salt
    • 1 teaspoon ranch seasoning mix
    • 1/4 cup blue cheese
    • 1/2 cup sour cream
    • Chopped celery leaves, around 1/4 cup

    INSTRUCTIONS

    1. Preheat your oven to 400˚F.

    2. Wash the sweet potatoes and place on a foil covered sheet pan. Bake for 45 minutes or until soft in the middle.

    3. While the potatoes are baking, place the chicken in a saucepan and cover with water and a pinch of salt. Poach until cooked through.

    4. Remove the chicken and let cool until it's comfortable to handle. Shred the chicken, then add to a sauté pan over medium heat. Mix in the butter, hot sauce, tomato paste, salt, and ranch seasoning. Bring to a simmer and cook for 5 minutes.

    5. While the chicken is cooking, mix together the blue cheese and sour cream. Set aside.

    6. Once the sweet potatoes are fork tender, remove from the oven and slit down the middle. Divide the chicken between the potatoes, then top with the blue cheese sauce. Sprinkle with the chopped celery leaves and serve with hot sauce on the side.
