INGREDIENTS
- 2 15.5-ounce cans of garbanzo beans, drained
- 1 clove garlic
- 2 chipotles in adobo sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 1 green onion, chopped
- Salt
- Pepper
INSTRUCTIONS
Place the drained chickpeas in a food processor along with the chipotles, garlic, lime juice, and olive oil. Pulse until smooth.
Season with salt and pepper then serve topped with the green onion and a drizzle of olive oil.
