Stir-Fry Up This Finger-Licking Shrimp Dish

A perfect blend of spice, sweet, and tart, this dish hits so many flavor levels, finishing off with the fulfilling combo of soft noodles and crisp napa cabbage. It's a perfect dinner, with leftovers doing double-duty as lunch the next day — if there are any.

Spicy Ginger Shrimp

INGREDIENTS

    • 1 cup No Yolks® Extra Broad noodles
    • 1 carrot, shredded
    • 1 cup shredded napa cabbage
    • 1 scallion, finely sliced
    • 1 large basil leaf, plus 2 mint leaves, finely sliced
    • 1 tablespoon chopped peanuts
    • 1 lime
    • For the shrimp:
    • 1 teaspoon vegetable oil
    • 1 clove garlic, chopped
    • 1/2 teaspoon grated fresh ginger
    • 1 pound fresh shrimp
    • 1/4 teaspoon hot sauce
    • For sauce:
    • 1 tablespoon water
    • 1 tablespoon soy sauce
    • 1 teaspoon hoisin sauce
    • 1/8 teaspoon sesame oil
    • 1/4 teaspoon hot sauce

    INSTRUCTIONS

    1. Bring a medium saucepan of salted water to a boil, and cook the noodles.

    2. Add the shredded carrot and napa cabbage to a mixing bowl. While noodles are cooking, mix together the sauce in a small bowl.

    3. Drain the noodles and add to the cabbage and carrots. Top with the sauce and toss to coat.

    4. Heat a medium pan over high heat and add the vegetable oil, garlic, and freshly grated ginger. Stir until sizzling, then add the shrimp, cooking 2 minutes per side. Add the hot sauce and stir, coating the shrimp with spicy goodness, sautéing until cooked through. Remove and add to the noodles.

    5. Top with sliced scallion, the slivered mint and basil, peanuts, and a big squeeze of lime. Toss again, and serve.

    Notes

    Use your favorite hot sauce with this recipe, and feel free to add to your taste.
