INGREDIENTS

    • 2 tablespoons tahini
    • 2 tablespoons lemon juice
    • 1 teaspoon cumin, ground
    • 1 teaspoon olive oil
    • 3/4 teaspoon salt
    • 1/8 teaspoon red pepper, ground
    • 15 ounces pumpkin puree
    • 1 garlic clove, chopped
    • 2 tablespoons flat-leaf parsley, chopped
    • Pumpkin seeds
    • Olive oil

    INSTRUCTIONS

    1. Place tahini, lemon juice, cumin, olive oil, salt, red pepper, pumpkin, and garlic into a food processor, and process until smooth. Add parsley and pulse until blended. Spoon hummus into a serving bowl, and garnish with pumpkin seeds and a drizzle of olive oil. Serve with pita chips.
