Pumpkin Hummus
INGREDIENTS
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 1 teaspoon cumin, ground
- 1 teaspoon olive oil
- 3/4 teaspoon salt
- 1/8 teaspoon red pepper, ground
- 15 ounces pumpkin puree
- 1 garlic clove, chopped
- 2 tablespoons flat-leaf parsley, chopped
- Pumpkin seeds
- Olive oil
INSTRUCTIONS
Place tahini, lemon juice, cumin, olive oil, salt, red pepper, pumpkin, and garlic into a food processor, and process until smooth. Add parsley and pulse until blended. Spoon hummus into a serving bowl, and garnish with pumpkin seeds and a drizzle of olive oil. Serve with pita chips.
