There's nothing like a good pickle, and you can infuse the flavor into all your favorite vegetables. Combine peppers, tomatillos, cucumber, cauliflower, and colorful carrots for a mix that has a slight kick. And it's a pretty addition to whatever you're eating.

Spicy Pickled Vegetables

INGREDIENTS

    • 3 cups white vinegar
    • 1 teaspoon salt
    • 1 cup water
    • 3 cloves garlic, smashed
    • 1/4 cup superfine sugar
    • 1 teaspoon fennel seed
    • 1 teaspoon whole peppercorns
    • 1/4 teaspoon chili flakes
    • 1 teaspoon coriander seeds
    • 2 shishito peppers
    • 4 mini peppers
    • 4 tomatillos
    • 1/4 small red pepper
    • 1 cup steamed cauliflower
    • 1 cup steamed mini carrots
    • 1/4 cup sliced cucumber
    • 4 radishes, sliced
    • Sprig cilantro

    INSTRUCTIONS

    1. Place the vinegar, water, garlic, sugar, salt, and seasonings in a saucepan and bring to a boil. Simmer for 10 minutes.

    2. While the brine is simmering, layer the vegetables in a large, sealable, 1-quart jar, creating a pretty arrangement of colors and flavors.

    3. Pour the brine over the vegetables, tuck in the cilantro, and seal. Place in the fridge and let chill for at least 24 hours before serving. The longer the vegetables sit, the stronger the flavor.
