Go Vegetarian Tonight With Barbecue Sweet Potato Burgers

Kick off the week on Meatless Monday with sweet potato burgers that are sweet and spicy thanks to your favorite barbecue sauce. This recipe is so simple and makes for good eats the next time you're having friends over to hang out or want to impress your non-meat-eating friends. And a thick layer of sliced avocado complements the crisp coating of the burgers.

Barbecue Sweet Potato Burgers

INGREDIENTS

    • 1 sweet potato, peeled and sliced
    • 1 (15.5-ounce) can white beans, drained and rinsed
    • 1 tablespoon barbecue sauce
    • 1 clove garlic, chopped
    • 1/4 teaspoon salt
    • 1/8 teaspoon pepper
    • 1/4 cup flour
    • 1/4 cup breadcrumbs
    • 1 tablespoon vegetable oil
    • 4 whole-wheat buns
    • 4 slices cheddar cheese
    • 1 avocado, sliced
    • 1/4 red onion, finely sliced
    • 4 leaves romaine lettuce
    • Additional barbecue sauce

    INSTRUCTIONS

    1. Peel and slice the sweet potato and place in a small saucepan. Fill with water and simmer until fork tender.

    2. Drain the sweet potatoes and add to a mixing bowl. Add the white beans, garlic, barbecue sauce, salt, pepper, and flour. Stir to incorporate, then use a potato masher to create a smooth texture.

    3. Cover a plate with the breadcrumbs, then form four patties from the mixture. Place on the plate, coating both sides with the breadcrumbs.

    4. Heat a large sauté pan over medium heat, then add the oil, swirling the pan to coat. Gently place the sweet potato patties on the pan and let cook 3 to 5 minutes per side, or until the outside is nice and toasted. Flip and continue cooking.

    5. To assemble, place a slice of cheese over each patty and let melt. Place on the bun base, then top with 1/4 of the sliced avocado. Add the lettuce and red onion to the other side of the bun and additional barbecue sauce. Assemble the rest of the burgers and serve.
