The touch of Greek yogurt elevates the creamy potato while garlic butter turns this side dish into what you're looking forward to for dinner.

Yogurt Whipped Potatoes With Browned Butter Garlic Sauce

INGREDIENTS

    • 3 lbs potatoes, peeled and cubed
    • 1/4 cup Greek yogurt
    • 1/4 cup milk
    • 1/2 tablespoon butter
    • 1/2 teaspoon salt
    • For the Sauce
    • 2 tablespoons butter
    • 3 cloves garlic, chopped
    • 1 teaspoon vegetable oil
    • 1/4 teaspoon salt

    INSTRUCTIONS

    1. Bring a stock-pot filled with salted water to a boil and add the potatoes. Simmer until fork tender.

    2. Strain the potatoes and add to a large mixing bowl. Add the milk, butter, salt, and Greek yogurt. Whip until smooth.

    3. Add the butter, vegetable oil, salt, and garlic to a small saute pan over medium-high heat. Stay close— this step goes fast! Once you see the garlic start to brown, stir the mixture until all the bits are the same golden hue. Remove from heat, drizzle the sauce over the potatoes, and serve while hot.
