Fresh thyme's calming flavor is the perfect complement to a cozy, refreshing cocktail. This fantastic drink will sooth away any remaining Winter blues with honey, lemon, ginger, and muddled cucumber.

For thyme-infused honey: Bring water to a boil in a small saucepan. Remove from heat, add sprigs of thyme, and let steep for 15 minutes. Strain, and then whisk in honey until fully incorporated.
For cocktail: Place 4 slices of cucumber, lemon juice, and thyme-infused honey into a shaker, and muddle. Add gin, a generous amount of ice, and a pinch of fleur de sel. Shake vigorously, and then strain into an ice-filled glass. Top with ginger beer, and garnish with cucumber slices and fresh thyme sprigs.
