    • 4 tbsp. coconut oil, melted + more for greasing
    • 2 cups almond flour
    • 1 tsp. baking soda
    • 1/4 tsp. salt
    • 2 room temperature eggs, separated
    • 5 tbsp. cashew butter
    • 1/2 cup unsweetened coconut milk

    INSTRUCTIONS

    1. Lightly grease a waffle maker with coconut oil and preheat to medium.

    2. In a mixing bowl, combine the almond flour, baking soda and salt. Set aside.

    3. In a separate mixing bowl, use a hand mixer to blend the egg whites until they form soft peaks. Set aside.

    4. Add the egg yolks, melted coconut oil, cashew butter and coconut milk to the flour bowl. Stir until smooth.

    5. Fold the egg whites into the bowl until completely combined.

    6. Place 1/4 of the batter onto the waffle maker. Cook for about 7 minutes.

    7. Use a spatula to carefully remove the waffle and transfer to a plate.

    8. Repeat with the remaining batter and serve warm.
