Zucchini Frittata

This easy zucchini frittata is the perfect make-ahead meal!

    • 7 eggs, beaten
    • 2 slices cheddar cheese, chopped
    • 1 zucchini, spiralized
    • Salt and pepper


    1. Preheat oven to 350 degrees. Heat a medium skillet, and sautée the zucchini. Spray an 8 inch ceramic baking dish with spray oil. Layer the cheese on the bottom, the zucchini second, and finally cover everything with the beaten eggs.

    2. Bake until the eggs are cooked and fluffy, about 20-30 minutes.
