To start, crack three eggs in a pan and season with salt and pepper. Let the eggs cook without stirring, and when they're just about done, put a soft flour tortilla on top and flip the whole thing over, so the tortilla shell is on the bottom. Putting the tortilla in second ensures the eggs and tortilla fuse together as one, so flipping the entire thing is no biggie! Mind blown yet? To finish, just add cheese, bacon, or whatever else you'd like in your quesadilla, and fold the tortilla in half. Toast on both sides and voila! You have a breakfast that's way better than anything on the go. If getting up five minutes earlier means having a breakfast quesadilla every morning, then it's a sacrifice we're willing to make.
