Day 8 Snack: Lemon-Chia Energy Bites

Prep Notes:

  • Eat 1 today energy bite today, keep 1 in the fridge for your snack on Day 12, and freeze 2 to enjoy after you've finished this Clean-Eating Plan.
  • Lemon-Chia Energy Bites

    INGREDIENTS

      • 1/3 cup dates (about 4 medjool dates), pits removed and soaked in water for 5 minutes to soften
      • 1/2 cup unsweetened shredded coconut
      • 2 tablespoons chia seeds
      • 1/4 teaspoon lemon zest (use 1/2 teaspoon if you like a stronger lemon flavor)
      • 1 teaspoon lemon juice
      • Pinch sea salt

      INSTRUCTIONS

      1. Blend dates in a small blender or food processor until broken into crumb-like pieces. Add coconut, lemon juice, and lemon zest and puree until mixture is smooth. Pulse chia seeds into the mixture until just combined.

      2. Form mixture into 4 balls. Eat 1 bite as a snack today.
