Coffee-Cream Soda Barbecue Chicken

INGREDIENTS

    • For the sauce
    • 1 cup barbecue sauce
    • 1/2 cup strong coffee
    • 1/2 cup cream soda
    • For the chicken
    • 1 3-pound chicken, backbone removed
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 cup cream soda

    INSTRUCTIONS

    1. Mix together the barbecue sauce, coffee, and vanilla in a small bowl and set aside.

    2. Score the chicken along the leg, thigh, and breast with a sharp knife. Sprinkle the chicken with salt and pepper then place in a medium mixing bowl. Cover with the cream soda and marinate for at least 2-hours.

    3. Grill the chicken over medium-low grill until chicken reaches an internal temperature of 165˚F. At the end of grilling, baste with sauce.

    4. Remove the chicken from the grill and drizzle with more barbecue sauce. Let rest 10-minutes before serving with more sauce on the side.
