From Sarah Lipoff, POPSUGAR Food
INGREDIENTS
- For the sauce
- 1 cup barbecue sauce
- 1/2 cup strong coffee
- 1/2 cup cream soda
- For the chicken
- 1 3-pound chicken, backbone removed
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup cream soda
INSTRUCTIONS
Mix together the barbecue sauce, coffee, and vanilla in a small bowl and set aside.
Score the chicken along the leg, thigh, and breast with a sharp knife. Sprinkle the chicken with salt and pepper then place in a medium mixing bowl. Cover with the cream soda and marinate for at least 2-hours.
Grill the chicken over medium-low grill until chicken reaches an internal temperature of 165˚F. At the end of grilling, baste with sauce.
Remove the chicken from the grill and drizzle with more barbecue sauce. Let rest 10-minutes before serving with more sauce on the side.
