Trying to eat healthy(ish) on Thanksgiving is like navigating a minefield of simple carbs: dinner rolls, pumpkin pie, and, my favorite, stuffing. The traditional Thanksgiving side dish is typically made with breadcrumbs and lots of butter. And while butter isn't a carb (sorry, Regina George), bread definitely is, which means it's off-limits for keto dieters and anyone else looking to eat low-carb.
We didn't think it was possible to have a low-carb stuffing alternative until we saw this Green Giant Riced Cauliflower Stuffing. Instagram user @reducingrhonda found a pack at her local grocery store, and it looks ah-mazing: riced cauliflower with carrots, celery, onion, cranberries, garlic, and herbs.
Unfortunately, the product hasn't been listed on Green Giant's website, so we're not sure of the nutritional info. But with cauliflower rice in place of breadcrumbs, it's pretty safe to assume this frozen medley has much fewer carbs and calories than traditional stuffing.
And while sweet potatoes (and pumpkin pie) aren't keto, Thanksgiving turkey certainly is. With this riced stuffing, you can totally build a keto-friendly Thanksgiving plate with turkey, roasted, nonstarchy veggies, and cauliflower mash instead of mashed potatoes. We also don't know which retailers currently carry the riced stuffing, but keep an eye out in your local grocery store's freezer section, where you typically find other Green Giant riced veggies. Since it's packaged and frozen, it looks like an easy dish to whip up for all your low-carb Thanksgiving guests.
