There's nothing I love more than lying poolside with a great book and a fruity summer cocktail in hand. But since I can't hit the pool or beach anytime soon, I've been on the hunt for an easy alcoholic drink I can make at home, and this boozy pineapple whip is as refreshing as it is sweet. The pineapple cocktail, which includes very few ingredients (frozen pineapple, coconut milk, coconut or pineapple rum, and sweetened condensed milk) surprisingly uses no ice, but it absolutely hits the cool and boozy jackpot.
Since the recipe has an equal combo of both pineapple and coconut, choosing your choice of rum doesn't offset the flavoring too much. I made a serving with each, and while the coconut rum was delicious, personally, there's a thing as too much coconut. I opted for the pineapple rum. Either way, both get the job done!
No matter if you're enjoying the AC indoors or catching some rays on the back patio, this blended pineapple whip is the only thirst quencher you'll need on a scorching-hot day. - 5 cups frozen pineapple
3/4 cup coconut milk
1/2 cup coconut rum or pineapple rum
1/4 cup sweetened condensed milk
Pineapple slices and maraschino cherries for garnish
- In a blender, blend frozen pineapple, coconut milk, rum, and sweetened condensed milk.
- Pour blend into a Ziplock bag, seal it, and cut off a corner with scissors.
- Pipe into glasses and garnish each boozy pineapple whip with pineapple slices and a maraschino cherry.
