Who says chili always has to be made with ground beef and tomato sauce? There are so many varieties of chili you can make that can be just as delicious and possibly even lighter. I think white chicken is amazing to try in your chili. Not only is it a leaner cut of meat, but you can even play around with the flavor profile of the dish, too.

Even though this white chicken chili is a play on the American classic, by no means does that mean it is not as hearty and warm to the soul. It's packed with protein, fiber, and, of course, lots of spices. So the next time you want to cozy up to bowl of chili, try this one out, and maybe it'll be a new favorite of yours. Here are all the ingredients you will need:

  • 2 large chicken breasts
  • 1 large red bell pepper chopped
  • 8 oz corn
  • 15.5 oz cannellini beans
  • 15.5 oz black beans
  • 8 oz cream cheese
  • 1 1/2 cups chicken broth
  • 1 small onion chopped
  • 2 tablespoons cilantro chopped
  • 3 cloves garlic minced
  • 2 juiced limes
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 tsp salt
  • 1 tsp black pepper
  • optional toppings: avocado, jalapeños, tortilla chips

First add your broth and then add the chicken, red bell pepper, corn, beans, onion, cream cheese, cilantro, garlic, lime, and spices into your Instant Pot bowl. Mix all together with a large spoon to combine.

Once all your ingredients are in, seal the lid on and press manual to set it to high pressure for 15 minutes. After the cooking time is up, allow the Instant Pot to depressurize for 10 minutes.

Take off the lid and remove the chicken breasts. Shred the chicken using two forks and then add it back into your pot. Give the chili a good stir to incorporate the chicken.
