Blackberry Cobbler
I've been meaning to add this recipe for awhile now. I made it with my class of preschoolers when we were learning about fruits, and they absolutely loved it! Some of the kids said "Ewww... berries!" but as soon as they tasted it, they changed their mind. I had parents calling me and begging for this recipe! My favorite comment was from one little boy who told me his tummy was soooo happy all night long.
If it's easy enough to make with 3 year olds, I think anyone can do it!
Blackberry Cobbler

Ingredients
- BISCUIT TOPPING:
1 1/2 c all-purpose flour
3/4 c sugar
2 t baking powder
1/2 t salt
6 T cold unsalted butter, cut into pieces
3/4 c heavy cream
BLACKBERRY FILLING:
4 c fresh or frozen blackberries
1/2 c sugar
1 1/2 T all-purpose flour
1/8 t ground allspice
Directions
1. Preheat oven to 375 F
2. Make the biscuit topping. In a large bowl, toss together the flour, sugar, baking powder, and salt. Using your fingers, rub the butter into the flour mixture until the mixture resembles coarse crumbs.
3. Add the cream to the crumbs, tossing with a fork until a soft batter forms. Set the topping aside.
4. Make the blackberry filling. In a large bowl, toss together the blackberries, sugar, flour, and allspice. Spoon the filling into an ungreased 13- x 9-inch baking pan, or pie plate (I find glass works best). Using a large spoon, drop mounds of the biscuit topping on the blackberry filling (the batter will spread as it cooks).
5. Bake the cobbler for 45 minutes, or until the topping is golden brown and the filling is bubbling. Let the cobbler cool slightly on a wire rack before serving. Serve warm or at room temperature.
