Chicken with Couscous
Candybee's Moroccan Feast
Original Recipe inspired by other recipes
Ingredients
- (Estimates. I just throw stuff together.)
1 tbs paprika
2 tsp turmeric
2 tsp coriander (ground)
2 tsp cumin
1/2 tsp cinnamon
2 lbs boneless, skinless chicken cut into cubes/chunks (I use breasts, but any part works!)
Extra Virgin Olive Oil
1 onion thinly sliced
4 cloves of garlic, crushed
2 lemons 1 thinly sliced, 1 juiced
2 1/2 cups chicken stock
1 cup pitted green olives
1 tbs butter
1 1/2 cups couscous w/ toasted pine nuts. I use "Far East" brand in a box.
1 handful of flat leaf parsley leaves
Directions
Serves 4
1. Mix together all the spices. Add the chicken & toss to coat.
2. Heat the olive oil in a pan until it starts to smoke. Add the chicken & cook a few minutes until browned. Add the onion, garlic & lemon slices. Cook until the onion is softened, like 6-7 minutes. Add ONE cup of the chicken stock, olives, and lemon juice. Remove from heat & season w/ salt & pepper.
3. In a saucepan, add remaining chicken stock & butter & bring to a boil. Stir in the couscous, remove from heat, cover & let stand 5 minutes. Fluff with fork.
4. To serve, spoon the chicken & sauce over the couscous & sprinkle with parsley.
Pair with a nice buttery chardonnay! ENJOY!
