Kartoffelsuppe (German potato soup)
I go to Germany every year and LOVE their potato soup. However potato soup in Germany= whole milk and real butter. Yeah, not really forgiving on the hips. So here's my version and I find that it tastes better than the one I had in Hamburg. Oh and I found using boxed mashed potatoes were easier to use, cut cooking time and tasted better.
P.S.- I know most german potato soups don't used mashed potatoes, but the one I had did.
(Makes about 2 servings)
Kartoffelsuppe (German potato soup)
Original Recipe
Ingredients
- 2 servings of mashed potatoes, prepared from the box with double the amount butter and about a 1/4 more of milk(I used butter substitute and skim milk)
A can of chicken broth or stock
1 bay leaf
salt & pepper
A handful ('bout a tablespoon) parsley dry or fresh
A dash of oregano ('bout a teaspoon)
Directions
1. Set the prepared mashed potatoes on low heat in a small sauce pan.
2. Add in about a 1/4 cup of chicken broth/stock, your bay leaf and spices.
4. Let simmer on lowest setting for 25 minutes, adding more stock until it's slightly runnier than needed.
5. Turn off heat and let thicken for a couple of minutes before serving
(Don't forget to take out the bay leaf!)
