Peter Piper's Pepper Poppers

Peter Piper picked a peck...
Okay. You don't need a peck of peppers to make this super-easy dish that will serve equally well as a main course or appetizer. Serve it hot or at room temp. Top it with any of your favorite condiments or align it with a side salad and mac and cheese.

Prep time 15-20 minutes
Cooking time: 20-30 minutes

Serves 4 as a main course, 6 - 8 as appetizers

This recipe is easy to adjust as needed.
It keeps well under refrigeration and can be reheated if desired.

Peter Piper's Pepper Poppers

Ingredients

  1. 6 or 7 Large banana peppers, seeded and cut into 1" rounds
    1 lb. Ground turkey, 93% lean
    1/2 cup Bread crumbs
    2 Tablespoons Olive oil
    2 teaspoons Garlic powder [or to taste]
    1/4 teaspoon Nutmeg [or to taste]
    Salt and pepper to taste
  1. Optional Sauces
  1. 1/2 cup Plum Loco Refrigerator Jam, any variety
    1/2 cup Marinara Sauce
    1/2 cup Cheese Sauce
  1. Equipment
  1. Cutting board
    Chef's knife
    Pairing knife
    Measuring spoons
    Tongs
    Large non-stick skillet w/ lid
    1 Mixing bowl
    2 Holding plates

Directions

Combine ground turkey, bread crumbs, olive oil and spices in a large mixing bowl. Mix by hand until will incorporated and set aside.

Cut banana peppers into 1 inch tubes. Seed and de-rib as needed.
Reserve tails for another use.

Stuff each pepper tube with meat mixture and place on holding plate #1.

Heat skillet to sautee temperature and stand pepper tubes, meat side up.
Turn when adquately browned.
Turn to brown other side, reducing heat as needed to prevent unnecessary scorching.

Reduce heat to medium / medium - high.
Knock the tubes down and place the lid on the pan.
Check frequently, turning to brown peppers on all sides.

Pepper tubes are done when meat is cooked and peppers are slightly transluscent.
Remove to holding plate #2.

As an Appetizer

Plate and serve with your favorite condiments.
Plum Loco Refrigerator Jam adds an unexpected sweetness to this spicy meatball. Marinara or cheese sauces also make wonderful dressings.

As an Entree
4 - 6 per person

Place 4-6 of Peter Piper's Pepper Poppers atop a fresh green salad,tossed with your favorite vinagrette. Garnish with slices of red onion, fresh tomato, and crumbles of your favorite cheese.

Top pasta marinara with Pepper Poppers for an interesting twist on the classic spaghetti and meatballs.

Place Pepper Poppers in a round atop your favorite mac and cheese. Garnish with slices of fresh tomato or roasted red peppers.
