Impress your guests at your next outdoor gathering with grilled chicken that oozes with flavor. Flattening out your bird helps it cook evenly, resulting in a juicy main dish that is elevated thanks to a sweet barbecue sauce.
- For the sauce
1 cup barbecue sauce
1/2 cup strong coffee
1/2 cup cream soda
- For the chicken
1 3-pound chicken, backbone removed
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup cream soda
- Mix together the barbecue sauce, coffee, and vanilla in a small bowl and set aside.
- Score the chicken along the leg, thigh, and breast with a sharp knife. Sprinkle the chicken with salt and pepper then place in a medium mixing bowl. Cover with the cream soda and marinate for at least 2-hours.
- Grill the chicken over medium-low grill until chicken reaches an internal temperature of 165˚F. At the end of grilling, baste with sauce.
