A nice, cold dessert is what everyone craves at the end of a hot Summer day. That's why we partnered with California Avocados for this sweet and easy recipe.

Making your own ice cream can spiral into a dizzying process of perfectly simmered eggs and milk (don't let it boil!), then straining, whisking, and waiting. Behold, the most basic ice cream recipe that includes an ingredient that transforms into heavenly silkiness: avocado. This cold treat has a touch of earthiness thanks to the green fruit alongside hints of honey and vanilla. It's a fun spin on traditional chocolate or vanilla for your next Summer gathering. Extra bonus? No cooking required.

Starting with fresh avocados is key, so select ones that give slightly when you press against the skin.

But what's really wonderful is the ice cream base comes together in a blender — no cooking required.

Whisk in the fresh lemon zest after the base has been pulsed in the blender, which adds just the right pop of zing.

The consistency of the finished dessert is similar to gelato, which elevates the mouthfeel.

Serve straight from your ice cream machine or let sit in the freezer for up to four hours for a more solid texture.

Easy Avocado Ice Cream

Ingredients

  1. 3 ripe, fresh California avocados
    1 1/2 cups whole milk
    1 cup sugar
    3 cups heavy cream
    1/2 teaspoon honey
    1/2 teaspoon vanilla
    Pinch of salt
    1/8 teaspoon lemon zest

Directions

  1. Halve the avocados and remove the pits.
  2. Measure and add the milk, sugar, cream, honey, vanilla, and salt to the blender. Scoop in the avocados. Pulse on low until smooth.
  3. Pour into a mixing bowl and add the zested lemon. Gently whisk to incorporate.
  4. Place the base in the refrigerator for at least 4 hours or overnight.
  5. Add to the ice cream machine and process for 20 minutes or until completely churned. Serve immediately or chill for at least 4 hours for a harder ice cream.
