Most grocery stores in America make their money on prepackaged stuff and use their produce departments to "prime" you into feeling hungry and buying something easier. Ethnic markets, on the other hand, serve a clientele that usually have a tighter budget and more mouths to feed. They'll buy more raw ingredients and they'll buy them more often. Therefore, [they] can order more from the supplier and usually get a much better price, since he's got to sell it before it goes bad too."
