Hello everyone!
Sorry for taking so long to post a new recipe, I feel so guilty. :(
However I do have an excuse...
Well, I guess it's because I've been busy with school and having some personal issues but other than that just lazy!
Today a new cake recipe was made and when that happens, out comes the camera!
It's a delicious simple cake, with a soft corny taste inside and rather crunchy on the outside.
I'm Brazilian, so making and eating Brazilian food is a passion, the best food in the world!

Ingredients

  1. 1 can condensed milk
  2. 3 eggs
  3. 3/4 cup coconut milk
  4. 1 cup yellow corn flour
  5. 1/2 cup oil
  6. 1 drained can corn
  7. 1 heaped tsp baking powder

Directions

Preheat oven to 375ºF/190ºC

Beat everything together in a food processor (adding the baking powder last)
If made in a bundt cake pan like I did it takes about 45 minutes to bake and using a round or squared cake pan takes about 35 minutes.

I love eating this cake right out of the oven, when it's got the humid doughy texture from the heat, just like a Pamonha!

Pamonha is a traditional Brazilian food. It's a paste made from corn and milk, boiled wrapped in a corn husk. Some people like to use coconut milk (like me, I make mine sweet with a couple strings of cheese mixed inside). They can be salty or sweet, most states in northeastern Brazil serve it as a sweet dessert, though.
