Ingredients

  1. 2 eggs
    1 cup granulated sugar
    1 tbsp molasses
    1/2 cup oil
    2 cups Pamela’s baking & pancake mix
    1 tsp baking soda
    1/2 cup cocoa powder
    1 tsp fresh ground cardamom
    1/4 tsp kosher salt
1 cup plain whole milk yogurt
    2 ripe apricots
    2 tbsp milk
    1/2 cup coarsely chopped almonds
1/2 cup unsweetened dried apricots, chopped
    Powdered sugar for dusting (optional)

Directions

1. Preheat oven to 375 degrees.
2. In a mixer, whisk eggs and sugar until pale yellow and thick, about 3 minutes.
3. Add oil and molasses to egg mixture, and beat for another minute.
4. In a separate bowl, combine baking mix, baking soda, salt, cocoa powder, and cardamom.
5. Puree apricots and milk in a blender until very smooth and creamy.
6. Combine apricot puree with yogurt.
7. With the mixer running on low, add a third of the yogurt mixture and a third of the flour mixture at a time, alternating, until combined.
8. Fold almonds and dried apricots into the batter.
9. Pour into a greased 9x5 loaf pan, and put in the preheated oven. After 10 minutes, reduce temperature to 325. Bake until a toothpick inserted in center comes out clean, about 45-50 minutes total.
10. Leave cake to cool in pan for about 10 minutes before transferring to a cooling rack.
11. Dust with powdered sugar and serve with good coffee, or with fresh apricot wedges and a dollop of yogurt.
