'Tis the season for tomatoes!! This dish can be featured as an entree or a side dish. Either way, it's delicious, healthy, and anyone can make it!

Potato Stuffed Tomatoes

Ingredients

  1. 8 tomatoes
    3-4 red potatoes
    1/2 green chili
    2 cloves garlic
    1 teaspoon cumin-coriander powder
    1 tablespoon lemon juice
    2 teaspoons vegetable oil
    salt/pepper to taste
    1/4 cup shredded mozzarella cheese

Directions

Wash the tomatoes. Slice the top off of each one and scoop the seeds and juice out of the tomatoes and into a large bowl. Set this aside.

Microwave the potatoes for about 8 minutes, and let cool. Mash the potatoes (keep the skin on!). After mashing, add the cumin-coriander powder, lemon juice, salt, and pepper. Then, combine the mashed potatoes in the bowl with the tomato juice and seeds. In a small pan, saute the chopped garlic and green chilis in vegetable oil. Add this to the mashed potato mixture.

After mixing thoroughly, spoon the mixture into the hollowed tomatoes. Top with shredded cheese.

Bake at 400F for 25 minutes, or until the cheese has slightly browned.
