Mindy Kaling Made Pizza Rolls For Her Daughter, and It's Basically Law & Order: Special Pizza Unit
Mindy Kaling is a mom on a mission: to get her daughter Katherine to eat vegetables. The best way to convince a kid to eat anything? Put it on a pizza, of course! On Friday, Mindy recorded her entire pizza-roll-making journey from start to finish on her Instagram Stories — and there were a few, uh, sticky situations to overcome along the way.
"Hello, Chef Mindy here! Today I made pizza rolls! Yes, I did make an Italian dish with a French t-shirt on. So what?!" Mindy captioned the post. After washing her hands (because they never film that on the cooking channels), Mindy showed us her recipe basics, including parmesan, mozzarella, spinach (the secret ingredient), and jarred tomato sauce. That all sounds pretty simple, right? That is, until the dough comes along.
As she held up a bag of store-bought pizza dough, Mindy jokingly defended herself by saying, "Hey, I ain't got no time to f*ck with homemade dough, okay? I've got a job. I've got like two full-time jobs." While she didn't think stretching out pizza dough felt very "ladylike," Mindy did say that it was satisfying and a lot of fun. When the baking sheet she was rolling her dough out on kept moving around, though, she improvised with Scotch tape!
Once she rolled out the dough and added the toppings, Mindy formed it into a "downright terrible" log that she sliced (with mathematical precision!) into 12 rolls, which she placed into a greased muffin tin. After an extra sprinkling of parmesan on top and a quick trip to the oven, it was time for a taste test. "It's basically a cinnamon roll in pizza form," Mindy said of the delicious-looking homemade snack.
It sounds like Mindy's sneaky vegetable pizza rolls were a huge success if Katherine asking for more is anything to go by. Mindy is no stranger to the kitchen, so it looks like we can expect more hilarious and kid-approved recipes in the future.
