This healthy fried rice is made from riced cauliflower to cut down on carbs without sacrificing taste.
Cauli-Fried Rice

Ingredients
- 2 tablespoons cooking oil
1 egg, beaten
1/2 zucchini, chopped into bite-sized pieces
4 ounces chicken tenders
2 cloves garlic, minced
1 1/2 cups riced cauliflower
2 tablespoons soy sauce
Directions
In a 10 inch skillet, heat 1 tablespoon of the oil. Scramble the beaten egg until cooked, about 2 minutes, and remove the egg from the pan. When the pan is hot again, add the chicken and cook the chicken tenders in the hot pan until lightly browned and cooked through, about 4 minutes per side. Remove. Add the remaining oil and sautéed the zucchini until lightly browned and cooked through, about 6 minutes. Add the garlic, and the cauliflower. Continue cooking until the cauliflower is done, about 4 minutes. Add the soy sauce. Add the egg and chicken back in. Adjust seasoning if necessary. Remove from heat and enjoy!
