- 4 really ripe, black-spotted bananas, peeled
6 cups flour
2 1/2 cups sugar
1 1/2 teaspoons salt
3 teaspoons baking soda
13 ounces butter, melted and cooled, plus more for greasing
3 tablespoons water
1 1/2 cups walnuts, divided
- Preheat oven to 350ºF. Grease two 8 x 4 inch loaf pans with butter. Mash bananas with a fork. In a large mixing bowl, stir together flour, sugar, salt, and baking soda. Stir in bananas, butter, eggs, water, and 1 cup of walnuts until well combined.
- Divide batter between each greased loaf pan and top each with remaining walnuts. Bake for 45 minutes or until toothpick test comes out clean. Cool slightly before turning out onto a cooling rack.
