Honey-Lemon-Mint Vinaigrette

Ingredients
- 1 tablespoon lemon juice
3 tablespoons olive oil
1 teaspoon honey (or more, to taste)
1 tablespoon chopped fresh mint leaves
Zest of 1/2 lemon, optional
Directions
- Combine all ingredients in a mason jar or bowl. Shake or whisk to combine, and serve with salad.
