Honey-Lemon-Mint Vinaigrette

Ingredients

  1. 1 tablespoon lemon juice
  2. 3 tablespoons olive oil
  3. 1 teaspoon honey (or more, to taste)
  4. 1 tablespoon chopped fresh mint leaves
  5. Zest of 1/2 lemon, optional

Directions

  1. Combine all ingredients in a mason jar or bowl. Shake or whisk to combine, and serve with salad.
