You'll Be on Board With This Italian Interpretation of the Rainbow-Food Trend

Everybody has certain foods that evoke happy memories of childhood and precious time spent with family. For me, Italian rainbow cookies are that certain food. My grandmother, a proud Italian, never fails to set out a tray of these during family gatherings. We sit around the table, drinking wine in the middle of the day and eating enough rainbow cookies to slip into a food coma.

So when I spotted Glaze Donut's rainbow cookie sign in the middle of New York Wine and Food Festival's jam-packed Italian Table event, I darted over immediately. But instead of being greeted by the classic cookie I was hoping for, I was met with a special hybrid: the rainbow cookie doughnut. Initially, I hesitated. Was another trendy hybrid dessert going to ruin my family's staple treat? I am happy to report that my resistance to accept this trendy version of my beloved dessert disappeared after just one bite. These rainbow cookie doughnuts stay true to all of the elements of the classic cookie that I love — light almond cake, flavorful sweet jam, and just the right amount of rich chocolate that kept me coming back for just one more sample. And if the flavor isn't enough to convince you to give this doughnut a try, it certainly doesn't hurt that they are totally begging to be Instagrammed.
