Haku Smoked Shoyu
I bet you've never had soy sauce quite like this before. Haku Smoked Shoyu ($22) is a masterfully made soy sauce that's cold-smoked using Japanese oak to give it a rich, bold, and smoky flavor. I first encountered it drizzled over a perfectly roasted bone marrow dressed with kumquats and salad, but I was so instantly drawn to the flavor I asked them to bring out the bottle. And that's when I became obsessed! Aside from the regular uses like dipping sushi or garnishing roasted salmon, I could actually see this being used in cocktails as well. The smoky, salty flavor is like an umami bomb. After one taste, you'll certainly want to use it on everything!
