You'll Want ALL of This State Fair's Latest Deep-Fried Delicacies

The Minnesota State Fair is known for its over-the-top Frankenstein foods — like its mac and cheese cupcake from last year. Located between Minneapolis and St. Paul, the fair will be open again this year from Aug. 25 to Sept. 5 with yet another hedonistic menu featuring Spam sushi, Italian tacos, and even bacon doughnut sliders. While some of the culinary additions make us instinctively reach for a bottle of Pepto-Bismol, there are a few we wouldn't be able to resist at least trying. Look ahead for some of the fair's latest offerings.

Candied Bacon Doughnut Sliders

These sliced doughnut holes are stuffed with candied bacon and topped with a chocolate and red wine ganache drizzle.

Spam Sushi

An unexpected take on typical sushi, this maki roll contains Spam and a fried egg.

The Carpe Diem

This buttermilk miso waffle cone is filled with a balsamic strawberry compote, vanilla ice cream, and graham cracker crumbles.

Italian Tacos

File this under things we'd definitely want to try: a tortilla bursting with Italian sausage, mozzarella cheese, bruschetta, and other flavorful ingredients.

The Minnesota Corn Dog

The fair's reimagined corn dog somehow manages to infuse blueberries, apples, wild rice, maple syrup, and cayenne pepper.

Chocolate Agate Crunch

The ice cream flavor combines chocolate ice cream with cookie crumbles and chocolate rocks inspired by the state's official gemstone, the Lake Superior agate.

The Strawberry Doughnut Delight

This dessert offering is like a strawberry shortcake sandwich . . . except with glazed doughnuts.
